Coffee beans · Freshness and storage

How long do coffee beans last after roasting (and how to store them)?

Short answer: whole beans are at their best from about a week to five weeks after roasting, still good to around two months, and noticeably flat by three. Ground coffee stales in days. Beans do not go off in the sense of being unsafe – a year-old bag will not hurt you – they just stop tasting of much. Store them sealed, cool and dark, not in the fridge, and buy in quantities you will finish within a month.

Key facts

  • Days 1–7 after roasting: beans release carbon dioxide (degassing). Very fresh beans can pour erratically on espresso; give them a few days.
  • Weeks 1–5: peak flavour for espresso and automatic machines. Filter and plunger drinkers often prefer weeks 2–6.
  • Months 2–3: aroma fades, sweetness goes, surface oil appears. Drinkable, not good.
  • Ground coffee: best within a day, acceptable for about a week or two in a sealed bag, stale after.

What makes beans go stale

Four things: oxygen, which oxidises the aromatic compounds; light, which speeds it up; heat, likewise; and moisture, which ruins beans outright and is why the fridge is a bad idea. Grinding multiplies the surface exposed to air by thousands of times, which is why ground coffee stales in days and whole beans in weeks. The best-before date on a supermarket bag is set 12–24 months out; it tells you when the coffee is unsellable, not when it stopped tasting good. Look for a roast date instead – freshly roasted vs supermarket coffee.

How to store coffee beans

  • Keep them in the bag. A good coffee bag has a one-way valve that lets gas out and keeps air out. Squeeze the air out, roll it down, seal it.
  • Cool, dark, dry. A cupboard, not the bench by the window, not above the oven.
  • Not the fridge. Every time the bag comes out, moisture condenses on the beans. Fridge beans also pick up food smells.
  • The freezer, done properly, works. For beans you will not use for weeks, portion them into airtight containers or sealed bags, freeze, and thaw each portion unopened to room temperature before opening. Never take a bag in and out of the freezer repeatedly.
  • Airtight canisters are fine if they block light and you fill them, so there is little air inside. Clear jars on the bench are decorative and bad for the coffee.

The hopper is not storage

The bean hopper on a Jura, DeLonghi or Breville is not airtight and sits on top of a warm machine. Beans in it go stale faster than in the bag, and old beans in a hopper go oily and coat the grinder. Put in a few days’ worth at a time and keep the rest sealed. Wipe the hopper when it empties.

How to tell beans have gone stale

  • Little smell when you open the bag.
  • Espresso shots run fast and thin with pale crema.
  • Flat, papery, or cardboard taste; bitterness with no sweetness.
  • A glossy sheen on beans that were matte when you bought them.

Do coffee beans go off?

Not in a way that makes them unsafe. Roasted coffee is dry and stable; old beans are stale, not spoiled. The exception is beans that have got wet and grown mould, which you will see and smell. Otherwise, a forgotten bag is drinkable – it just is not worth drinking.

Frequently asked questions

How long do coffee beans stay fresh after roasting?

At their best 1–5 weeks after roasting, acceptable to about two months, stale by three. Ground coffee stales within days.

Do coffee beans go off?

They go stale, not unsafe. A year-old bag is drinkable but flat. Only wet, mouldy beans should be thrown out for safety.

Should coffee beans be stored in the fridge?

No. Condensation and food odours ruin them. A sealed bag in a cool, dark cupboard is right; the freezer works for long-term storage if portions are sealed and thawed unopened.

Can you freeze coffee beans?

Yes, in airtight portions, thawed unopened before use. Do not take one bag in and out of the freezer repeatedly.

How long does ground coffee last?

Best within a day of grinding, acceptable for a week or two sealed, stale after that. Buy whole bean if your machine has a grinder.
